Update cookbook to fix vim and freedoom

Nushell is broken, but that's not a cookbook problem, it's because of the toolchain upgrade. I will send a separate MR for that. There's something wrong with CI, it's not picking up libgcc when it is creating the image. I will look into it, I think it's the way the installer handles dependencies, but this is still better than what we have right now.
