Add `examples` subprojects

Problem

#19 (closed) shouldn't have happened. It was the intent that users could construct their own Environments and pass them into parse::eval et al.

Solution

Create examples sub-projects that are integrated with cargo test that serve as example libraries / applications. These would serve as regression tests for API changes.
